The " Cigogne" Burger

Ingrédients

2 potato pancake – 80 g
80 gr cooked sauerkraut or candied onion
60 gr smoked and cooked pork collar
30 gr Munster cheese

Recipes

Garnish a potato pancake with sauerkraut or candied onion. Add the slice of smoked collar then the slice of Munster cheese. Cover with the second potato pancake.

Bake at 170 C° for 10-15 minutes.

The potato should be crispy and the cheese should be runny.

Preparation

Place the Burger “Cigogne” in the center of the plate and serve with a small salad.

Pork shank in Munster cheese

Place the pork shank in a casserole, add a clove of garlic and a sprig of rosemary to flavor the shank during cooking.

Bake at 170C° for 30 minutes (without lid). Check the cooking regularly.

Using a spoon, coat the shank several times with the meat juice to caramelize it.

Munster cheese sauce :

25 gr of butter
25 gr of flour
2 cloves garlic
2 sprigs of rosemary
300 gr of fresh cream
300 gr of fresh munster cheese
100 gr of Riesling wine

Cut the munster cheese into regular pieces.

Heat the cream with the rosemary, chopped garlic and riesling wine

Incorporate the munster cheese little by little and mix with a whisk.

Make a softened butter by mixing flour and butter

Remove the rosemary sprig, mix and add the softened butter. Mix with a whisk.

Accompany this dish with delicious spaetzle fried in butter or with sauerkraut.
